As part of the 48th edition of the Mexican Tourist Market, a tasting will be held open to the public.
A food truck will promote the state with the flavor of this emblematic Yucatecan dish.
With the traditional flavor of Yucatecan seasonings, Cochinita Pibil will be the ambassador of the Yucatan Gastronomic Federation. It will arrive in Tijuana, Baja California, as part of the 2025 Mexican Tourist Market, with the YucaTruck, to delight the palates of locals and visitors from April 25-30.
The president of the Yucatan Gastronomic Federation, Carlos Guillermo Aguirre Aguilar, along with his team and environmental foundations, presented the activities to be developed to promote Yucatecan gastronomy in Baja California.
As part of the activities to be undertaken during the Tourist Tianguis, which will take place from April 28 to May 1, there will be gastronomic tastings of Yucatecan dishes, for three days in Tijuana and two in Rosarito Beach.
For five days, he explained, the food truck, which will bear the image of the majestic San Bernardino de Siena Convent in Valladolid, is expected to serve more than 5,000 Cochinita tacos, allowing the community to enjoy the flavors of Yucatán.
The Cochinita Pibil, he explained, will be prepared with original La Anita brand seasonings by the state’s chef and traditional cooks, who are part of the delegation that will be present at this major tourism event in Mexico.
He specified that the tastings will take place at the Tijuana Bullring, at the city’s Monumental Clock Arch, and at the Baja California Center, where the public will have the opportunity to enjoy other local products such as Celestún craft beer, made with bitter orange, and habanero chili sauces, among others.
He emphasized that among the promotional activities of the Yucatan Gastronomic Federation are three pairing dinners at premium restaurants in Tijuana, to introduce the region’s cuisine to potential high-net-worth visitors from the north of the country.
This initiative by the Yucatan Gastronomic Federation is supported by important and long-standing local businesses such as Dunosusa, Galletera Donde, La Anita, Panadería La Mejor, Marquesita la Nueva Tradición, MayanFood Cocina Tradicional, Esmeralda Brewing, Cervecería Yucateca, and Holiday Inn and Suites la Isla.
Escalante Alcocer specified that within the framework of the 48th edition of the Mexican Tourist Market, important agreements will be signed with organizations affiliated with the Yucatan Gastronomic Federation, to promote a major national project in this sector, which is part of the tourist and cultural attractions that distinguish us as a region and country.
“The first will be with representatives from cities in the southeast, including Tulum, Quintana Roo; San Francisco de Campeche, Campeche; and Tuxtla Gutiérrez, Chiapas; the second will be with the Tijuana business association; and the third will be with environmental organizations based in Ensenada,” the business leader concluded.
