Yucatecan dishes are hard but not impossible to find in the U.S.

Yucatán has one of the oldest culinary traditions in Mexico. Even today, people still prepare dishes eaten by the Mayans, who settled in the region more than 4,000 years ago.

The state is located in the upper part of the Yucatán Peninsula, in the southeastern corner of Mexico. It’s filled with tropical jungles, and the Gulf of Mexico borders the entire northern part of the state. This combination contributes to its cuisine’s diversity, with dishes inspired by both the land and sea.

Yucatán’s food is unlike any other in Mexico due primarily to its condiments. The most popular is achiote, which comes from a plant that bears red fruit and is the base of many dishes.

“It’s delicious and very healthy food because they don’t use a lot of fat, they use natural ingredients, it’s gluten-free, everything is very organic,” said Nico Sanchez, chef and operations manager of Meso Maya, one of the few restaurants in North Texas that offers some Yucatecan dishes.
